Today’s entry is crazy easy, and is one of my favourite weekday breakfasts. It is simple, reliable, and oh so delicious. It also takes less than 5 minutes to make. I first came across this granola topping here, where it was used to make "apple crisp parfait" with spiralized apples. I immediately had to try it out myself, and was delighted with the tasty, crunchy results!
This recipe is so simple, the only trick is that you need to make it at least 20 minutes before you want to eat it, as the granola needs to harden in the fridge or freezer. Typically, I double this and make four servings at a time in the evening, and store it in the fridge, so that I have it ready to go as a quick breakfast on weekday mornings.
Ingredients (makes 2 servings):
- 2 tbsp steel cut oats
- 1 tbsp palm sugar (or brown sugar)
- 1 tbsp flour (I used garbanzo bean all purpose flour, but any all purpose flour is fine)
- 1 tbsp coconut oil, softened to liquid state (you could use butter too)
- Twist of salt
- dash of cinnamon
Combine ingredients in a microwave safe bowl with a large flat bottom, or transfer to a plate for microwaving.
Microwave for one minute. Remove from microwave, stir, and return to microwave for another 30 seconds.
Store in airtight container, and refrigerate for at least an hour, or twenty minutes in the freezer. This part is key to make your granola crunchy. When you are ready to serve, shake the container to break it up, as it will harden together.
Serve with your favourite yogurt and fruit combo.
